Recipe for shredded chicken tacos:
This is an instant pot recipe but you could use a slow cooker with a few tweaks.
1 large or 2 small frozen chicken breast
1 can of Rotel tomatoes
12 oz of chicken broth
2 tablespoons of "Give Em Something To Taco Bout " seasoning
Optional 2 tablespoon of oil
Crispy taco shells (6 to 8)
Instructions:
Pour Rotel and broth into the pot, then place the trivet in the pot (this prevents the burn feature from being triggered)
Place frozen chicken on the trivet and top with the oil and the seasoning
Seal the lid and turn the pot on high pressure for 15 minutes, then allow 10 minutes fo natural release.
Make sure you release the rest of the pressure thoroughly before opening the lid
Take the chicken out and allow to rest for 5 min before you shred it
In the meantime, take the trivet out and turn the pot to saute so that the sauce will reduce for 15 minutes stirring frequently
Add the shredded chicken to the sauce, mix it up and stuff it into your shells
Top with lettuce, tomatoes, onions and hot sauce
